Veggie Fajitas with Vegan Cheese Recipe

There are a few staple meals in our house that I rotate on a weekly basis. Veggie fajitas is one of them. They are so easy, the whole family loves them, and they are quick to make! And, this recipe comes together in a flash, so it's a great weeknight meal.

One of the great things about this recipe is its versatility. There are so many veggie options you can intermix and substitute for the ones I’ve listed in this recipe. This is especially perfect if you shop your local farmer’s market--chose the produce that is seasonally available to you! Some suggestions for additional veggies I LOVE in fajitas: zucchini, yellow squash, any spicy peppers, black beans, refried beans, and red onion. Try out a new variation each time and see what your favorite combinations are!

Fajitas are delicious on their own, but add a yummy vegan cheese sauce that is not only delicious but healthy too--you have the perfect meal. I use to be a cheese lover. I would use cheese on just about anything I could. After finding out cheese and other dairy was causing my inflammation, I stopped eating it all together. It was hard at first, but now I don’t really miss cheese at all. Most people think I’m nuts when I say that, but it’s true. The secret to my success? Finding healthy non-dairy cheese recipes that fill that missing cheese void!

Just like the fajita recipe, this cheese recipe is also versatile--use it anywhere you’d use cheese! Make your own tortilla chips and add my cheese sauce recipe to make a super healthy and delicious appetizer! Veggie Fajitas with Vegan Cheese Recipe

Serves 4-6

Ingredients:

  • 8 ounces white button mushrooms (cleaned and sliced)
  • 3 bell peppers, variety of colors (thinly sliced)
  • 1 yellow onion (thinly sliced)
  • 1 Tablespoon olive oil
  • 2 Tablespoon soy sauce
  • 2 Tablespoon chili powder
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon cumin
  • ¼ black pepper
  • salt and pepper to taste
  • 4-6 whole wheat tortillas

Cheese Sauce Ingredients:

  • ¼ cup raw cashews
  • 1 cup water
  • 2 Tablespoons tapioca flour
  • 2 Tablespoon of Nutritional Yeast
  • 1 teaspoon lemon juice
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ cup green chilies 

Instructions:

  1. In a large skillet heat oil over medium high heat. Add in onions. Sauté for 5 minutes. 
  2. To onions, add in bell peppers and mushrooms. Sauté for 10-12 minutes or until veggies are soft.
  3. To cooked veggies, add in soy sauce, chili powder, onion powder, garlic powder, cumin, and black pepper. Stir to incorporate. 
  4. Serve cooked and seasoned veggies in whole wheat tortillas.

For cheese sauce:

  1. While fajitas are cooking, in a high speed blender combine raw cashews, water, tapioca flour, nutritional yeast, lemon juice, onion powder, and garlic powder. Blend on high for 2-3 minutes or until completely smooth and warmed.
  2. To warmed cheese sauce, stir in green chilies. Pour cheese sauce over plated fajitas.

** Tapioca flour is preferred but if it is not available use 2 Tablespoons of cornstarch.
