The other day I was having an "I don't feel like cooking" day. This doesn't happen very often but it does happen and I'm sure you can relate: you want something that tastes great with little effort with the few ingredients you have on hand. I came up with the perfect recipe for these type of days--"Simply Gourmet Pasta Salad". It's easy to make, with a few simple ingredients, and tastes like a gourmet dinner. WIN WIN! Serve this for dinner and you will sure to satisfy everyone.
Simply Gourmet Pasta Salad (serves 3-4 as a meal)
3 1/2 cups whole wheat pasta of choice
1 Tablespoon olive oil + 2 tsp for drizzling
3 1/2 cups (packed) fresh spinach
3 cloves garlic (minced)
3/4 teaspoon salt
1/2 cup sun dried tomatoes (chopped)
Pinch of red pepper flakes (optional)
Cook pasta according to package directions. While pasta is cooking, heat 1 Tablespoon oil in a medium to large sauté pan on medium high heat. Add optional red pepper flakes and the fresh spinach. Sauté spinach in pan, stir occasionally for about 5-10 minutes or until the spinach as wilted. Once spinach is wilted add garlic, chopped sun dried tomatoes, and salt warming for another 1 minute. Drain cooked pasta. Add spinach and tomato mixture and drizzle 2 teaspoons olive oil. Stir until evenly distributed. Serve warm.
