Monday was my youngest son's birthday, he turned 4! Naturally, we had to have a special treat so we made cupcakes for his party. I've been making my son's birthday cakes from scratch since their first birthday parties. I'm not sure the last time I used a "box cake mix". The reason? Box cake mixes tend to have a lot of filler ingredients...things I can't pronounce nor do I want them in my body. Making your own cake from scratch is not only easy, it's delicious! You know what you're eating and you can pronounce it all. That means your body recognizes it as food and it can deliver the nutrients accordingly.
This year the birthday boy requested chocolate cupcakes and strawberry frosting with lightsabers to top his Star Wars birthday theme. I have some tried and true cake recipes that I used but didn't have a frosting recipe I loved. I LOVE frosting on cake, but it can sometimes be a little too sweet even for my sweet tooth. I came up with this nice balanced recipe that really highlights the strawberry flavor.
I wouldn't call this 'healthy' because there is a lot of sugar involved, BUT I would say it's a healthier alternative to traditional recipes and a million times more healthy than the store bought variety!
Healthier Strawberry Frosting
Frosts 12 cupcakes
- 3 cups powdered sugar
- ¼ cup whole wheat flour
- ¼ cup vegan margarine
- ¾ cup fresh strawberries
- ½ teaspoon pure vanilla extract
- In a food processor, combine all ingredients and process until smooth.
- Add more sugar for a thicker recipe. I found it the perfect balance between frosting and icing. Best if kept in refrigerator as the lower fat content in this recipe makes it less think compared to traditional recipes.
- Frost cake or cupcakes and enjoy!

The Star Wars party was a hit! He loved his cupcakes and approved of the glow stick lightsabers and Yoda water bottles :) Living a healthy lifestyle doesn't mean you have to sacrifice fun or special treats.
