Vegan Pumpkin Spice Donut Recipe

You heard that right, "VEGAN PUMPKIN SPICE DONUTS"! OH YES!! Since getting my donut pan, I've been obsessed with making donuts (healthy ones of course ;) ). And because Fall is here, what better way to ring it in than with a Fall inspired donut. 

On this week's 'Tasty Thursday', I'm sharing my new recipe for a vegan and healthier alternative to the traditionally un-healthy morning staple. Pumpkin adds tons of vitamin A, C, and E which are powerful antioxidants this is especially helpful this time of year when cold and flu season is starting! 

Vegan Pumpkin Spice Donut Recipe

Makes 6 donuts (easily doubled if have a 12 donut pan)

Donut Ingredients:

  • 1⅓ cup whole wheat flour
  • ⅓ cup raw sugar
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground clove
  • ½ cup almond milk
  • ½ cup 100% pure pumpkin (I used canned)
  • 2 tablespoons raw unfiltered apple cider vinegar
  • ½ teaspoon pure vanilla extract

Donut Instructions:

  1. Preheat oven 375 F.

  2. In a medium bowl, whisk together flour, sugar, baking soda, salt, cinnamon, nutmeg, ginger, and clove. Set aside.

  3. In a separate medium bowl, whisk milk, pumpkin, apple cider vinegar, and vanilla.

  4. Add dry ingredients to wet ingredients until combined. Do not over mix.

  5. In a large ziploc bag (or pastry bag), fill with donut mixture. If using a plastic bag, cut corner about ½ - 1 inch wide.

  6. Pipe the prepared donut mixture into a 6 donut pan. (I found it easier to keep your hand steady and pipe the donut ring as you turn the pan slightly.) Once all piped, slightly tap the dough down with your finger to make it even.

  7. Bake for 10-12 minutes or until toothpick is clean when inserted. Let cool on a wire rack for 5-10 minutes before unmolding. (This makes it easier to remove.)

  8. After cooling slightly, remove from pan. Let donuts cool completely on a cooling rack before sugaring.

Sugar Topping

Topping Ingredients:

  • ¼ cup raw sugar
  • 1 teaspoon ground cinnamon
  • 2 Tablespoons vegan margarine

Topping Instructions:

  1. In a small bowl, combine sugar and cinnamon. Set aside.
  2. In a separate small bowl, melt margarine (be careful not to over heat, it may get very hot and pop!) Set aside.
  3. Take the top of each donut and quickly dip into margarine (don't let it soak in, just enough to make the tops wet for the sugar to stick). 
  4. Then immediately dip into sugar cinnamon mixture. Set aside. Repeat until all are coated.
