No Bake All Natural Granola Bar Recipe

Hi friends! I have been searching for a healthy snack that is portable and packed with nutrition. Granola bars are the perfect combination, but with most store bought versions containing some questionable ingredients (high fructose corn syrup, food dyes, and preservatives) I decided to create my own recipe. I came up with this recipe for an easy no bake and no sugar added all natural granola bar recipe! 

These bars include pumpkin seeds which are an excellent source of B vitamins-- B vitamins are great energy boosters. Pumpkin seeds are also packed with protein. The sunflower seeds in these bars are high in antioxidants which help ease inflammation. They are also a great source of magnesium which is a calming and nerve soothing mineral. Not only do these granola bars taste great, they are power packed with protein and health promoting vitamins and minerals!

No Bake All Natural Granola Bar Recipe

(Makes 1 8-inch pan)

Ingredients:

2 1/2 cups raisins (all natural)

1 1/2 cups old fashioned oats (plain)

1/4 cup shredded coconut (no sugar added)

1 tsp cinnamon

1/4 tsp sea salt

3/4 cup raw pumpkin seeds

1/2 cup raw sunflower seeds

Directions:

Line 8 x 8 inch square pan with plastic wrap. In a food processor combine raisins, oats, coconut, cinnamon, and sea salt. Process until mixture is combined and forms large clumps. (It is ready when you can press some of the mixture to the side of the food processor and it sticks). Transfer raisin and oat mixture to a bowl and add in sunflower seeds and pumpkin seeds. Combine.

Pour mixture into the lined square pan. Place another sheet of plastic wrap over the granola mixture. Using your hands, press the mixture firmly and evenly into the pan. Place in refrigerator and chill for 1 hour. After chilled, cut into bars and serve.
